Dear Vegetable Husband Customer,
For your regulars, I am so sorry to close on you last week but I had to be in DC for the experience of witnessing the inauguration. For you newcomers, welcome to winter veggies! We are so fortunate to have farmers that have put in the extra hours doing everything they can to keep our food alive and growing in these trying temperatures. Hopefully the worst is behind us. This week we have yummy produce from several farms.
Steve Miller’s farm is providing us with great carrots again as well as the spinach and Brussels sprout greens. Just cook these as you would any other dark leafy green. I find they have a rather sweet flavor to them. I love my greens, and Full Moon Farms has once again given us gorgeous salad greens.
The one thing many of you might not be familiar with isl the Sunchokes or Jerusalem artichokes as they are also called. They look like a ginger root but you can just clean them, and slice them raw into a salad. That is my favorite way of eating them. You can also sauté them with other vegetables. Below is your list of goodies for this week:
Mixed salad greens
Collards
Sunchokes (Jerusalem artichokes)
Brussel sprout greens
Cilantro
Baby spinach
Carrots
Onions
