Letter 30

Dear Vegetable Husband Customer,

Well life never gets dull when you can always be hit with an element of surprise, and staring out at a city full of thick snow on a Sunday afternoon was just that – a surprise!  I know they forecasted snow but those of you who are from Atlanta know they have forecasted snow before.  This was full-on “Midwest gets buried” snow and that is what it did to our farms.  In Athens, they dealt with over 8 inches of snow and one of the plastic domed houses that protect our beautiful lettuce and herbs was destroyed.  I am sincerely sorry for missing the opportunity to provide you with veggies last week.

The good news is they are back.  This week the crops seem to be ready to produce.  We have a couple of new things and plenty of our winter friends.  I picked up a little extra this week because Full Moon needed to harvest, so enjoy!  I have been told that we will be adding new spring vegetables in 2-3 weeks so look out.  I feel like patting myself on the back.  I have eaten all local vegetables all thru the winter season.  Whehoo!  I love greens but even I was getting a little tired of sautéed greens and whatever else I wanted for protein.  By the way, I am loading a dee-lish recipe for pasta stuffed w/ greens & goat cheese.  For those of you who don’t get Mary’s goat cheese you can always substitute a cream cheese or ricotta (and for my vegan friends, a tofu non-dairy cheese substitute).  It is easy to make and so good!
