Dear Vegetable Husband Customer,

Happy Earth Day, y’all!!  I hope you all enjoyed the fruits from a neighboring farmer in Florida last week.  Many of you commented on the oranges.  Thanks for the wonderful feedback.  I always share that with the grower.  It lets them feel a real connection and keeps them charged.  This week we have wonderful beets and carrots from Taylorganics.  These sugary veggies will have to be our fruit for now.  Soon we will be enjoying our own Georgia berries.  Remember, the beet greens are a delicious veggie too.  I will forward you a recipe for roasted beets and beet greens with pasta.  It was a magical supper for me.

You also have a head of Chinese cabbage this week.  This is a great treat.  You can sauté or steam this or chop it raw for a salad.  If you look in the recipes, there is a wonderful Asian chicken salad recipe that I will use over and over for Chinese cabbage.  For my vegetarian friends, cooked tofu as a protein is also great with this recipe.  I like both!

Many of you took advantage of the availability of eggs this week.  This will be a regular courtesy if all goes well so anytime you need more just get an email in by Monday.  Please recycle your egg cartons.  The farm uses all recycled cartons (I promise I am not running to Publix for these like the carton reads…lol)

Spring is in full motion now so we should really start to enjoy more and more variety in the coming weeks.  Thanks to all of you that joined me in eating local all winter.  We have arrived into the next season now.  Have a great week and remember, I am always happy to TALK FOOD!
