Well as I am catching up from the holiday, I came across this article.  It looks like one more obvious mark our industrialized food products are leaving on natural resources.  Enjoy your fresh local honey when you can and remember these bees fly quite a distant so even a few miles from the bees is too close!

Dear Vegetable Husband Customer,

As we promised, we are delivering on Tuesday for Thanksgiving.  We are watching the fall leaves rain down on us as we enjoy these wonderful mild temperatures.  I hope your holiday will be everything you want and more.  Please know that I am giving thanks this week for all of you that have found your way to us and all of our wonderful Georgia farmers.  It is unbelievable the amount of beautiful produce growing for us right now.  I cannot give you a list of items since many of you ordered custom baskets for your holiday meals.  Your list is printed on the back of this letter.   Most of us chose to get some sweet potatoes and greens of some sort.  I will be making standard recipes substituting our GA green onions for regular onions in my dressing and such.

We are also posting several recipes to help you with ideas on the substitutions for local food in your holiday traditions.  Since I can’t include my normal list of items below, I have included a list of folks Vegetable Husband is thankful for this year.  We are giving thanks for:

Dear Vegetable Husband Customer,

This is a bountiful harvest this week as we gather a huge bunch of beets from Riverview Farms.  Remember to eat the greens from your beets early in the week, as they do not last long out of the ground like I other greens.  Maybe mix the beet greens with your turnip greens for a nice side dish for lunch one day.  As many of you know, I am a big fan of greens with my eggs.  You have a beautiful lime-colored green and that is your Tokyo Benaka.  It can be eaten raw or sautéed lightly much like your Chinese cabbage.  Between this and our lettuce, tomatoes and dandelions from Woodland Gardens, we have possibilities for incredible salads.  If you are curious about the dandelions, I am adding a recipe to the website.  It should post by tomorrow morning.

This might be the last of the Georgia apples so enjoy them – maybe cook a pie or some jam.  I am making apple butter with the ugly fruit.  You just might get a chance to taste some this winter if my cooking day goes well…This is probably the last time we will see a ripe tomato too.  Celia had a sudden burst of the last plantings this week so we are fortunate to share in the bounty.  Maybe we will get another harvest of the green tomatoes though.  Those were great, weren’t they?!  Below is your list of goodies for this week:

Dear Vegetable Husband Customer,

It is a beautiful fall day to travel and harvest our food this week.  I feel really lucky to be out here.  We have gorgeous food from some nearby farmers too.  This week you have a tall Chinese cabbage from Serenbe Farm.  One of my favorite recipes is the Chinese cabbage salad on the website.  It uses bok choy and chicken but you could always use your kamatsuna greens to replace the bok and leave out the chicken for a vegetarian version.  It is really tasty and I have made it several times.

We also have lovely green tomatoes and green peppers this week, ideal for some sort of warm curry dish.  Please remember that unless your tomatoes have some red spot on them, they will not ripen to red on the counter.  The weather is now to cold for them to ripen.  Cooking with green tomatoes is a treat or using them raw.  Let me know what you do with them.  This week the arugula came from inside the Perimeter at Gaia Gardens so we are getting even more local.  We will definitely be getting beets for next week so get ready.  Beets are one of my favorite fall veggies.  We are still getting some Yates apples this week but we are approaching the end of the harvest.  I am going back up for one more harvest.  If any of you would like a large amount of these for cooking or making apple butter (that is my Xmas gift to friends…), let me know.  I will be happy to sell them to you like an extra.  I have made pies and cobblers three times this week, without most of the sugar.  Pie for breakfast!  Below is your list of goodies for this week:

Dear Vegetable Husband Customer,

I feel like the veggie delivery duck this month since it only seems to rain on Wednesday but it really hits hard when Wednesday comes.  At least your greens won’t be dried out this evening (smiles).  If you see your driver I hope you gave ‘em an extra big smile.  The good news is the farms look better than ever!  The moisture has given them a lushness that we have not seen in quite some time.  I think we can all look forward to a table of plenty over the next month or two with fall goodness is full swing.  I am hoping for a crop of beets next week.  For this week, we are enjoying several items from Woodland Gardens including the baby kale and the luscious lettuce.  Woodland Gardens also harvested one large Daikon radish for each of us this week.  You can grate this for salad, or slice and cook them like a turnip.  I used them shredded in salad a lot.

Full Moon Farm provided us with some potatoes and one more butternut squash before they disappear for the season.  I drove back to Ellijay for a fresh harvest of the apples this week and we all have the small Yates now.  They should be even better since they stayed on the tree for a cooler temperature before being picked.  The ones I ate for breakfast on the way back from the farm were great!  Farm Burger restaurant also has some this week so if you are a fan, look for an apple something-somethin’ on the menu-it will be your very same apples.  Our weekly recipe is a very easy apple cobbler so if you still have one or two from last week, I say bake them up!  I used a lot less sugar than the recipe called for because I substituted some honey.  Below is your list of goodies for this week:
