A nice note from our friend Laurel….

Hey Margie,

I wanted to tell you how pleased I have been with Vegetable Husband! I await with eager anticipation each Wednesday to see what will show up in my basket. I always hang your letter on my fridge as a reminder of how my participation is helping to support our local food economy. I am so grateful for the thought that goes into each week’s selection and the farmers that make it all possible. I have thoroughly enjoyed exploring new varieties of food since I have made a commitment to eating locally a year and a 1/2 ago. Sunchokes, turnips, rutabaga, are okra are just a few of these new discoveries. I do have to say, however, that after eating hearty greens throughout the summer, this week’s lettuce seemed a little pale in comparison. The arugula was heavenly though!

We are SO spoiled!

Just thought I’d check in to say we miss you all.  It gripes our souls to have to buy vegetables at the supermarket these days!  We were so used to having lovely fresh local produce; it just isn’t the same.  Hope all is going with with the VH crew.

Just wanted to take a moment…

Here’s a nice note from our friend Veral and her family…

Hi Margie,

Hope you are doing well…we have enjoyed our vegetables.

You asked in your weekly letter (which I really enjoy reading) about how we would fix the carrots.  First of all, the carrots were very tasty.  I sliced them & put them in a rice dish I was preparing about 5 or 10 minutes before cooking  was complete. I make this dish like my mom used to fix rice a roni except that I use brown rice, olive oil and my own seasonings (and sauteed onions).  Sometimes, I even add green lentils.

When I was running out of time when fixing dinner one night, I did the same with the zucchini and I put a little Smart Balance over them for flavor.

Also, Just wanted to let you know that I enjoyed the hydroponic arugula and the watercress.  They were tasty and they seem to last longer which was good for us.

The grape tomatoes were really good.  And the cabbage was really outstanding.  I  noticed that the cabbage was large but sweet (even when raw).    I have eaten raw cabbage that has had a bitter taste.  But not this cabbage.  It was good.

So, I just wanted to take a moment to say thank you, to you and the farmers who bring us all this healthy food.  Appreciate your efforts.

During the cold winter months….

This has been a particularly challenging winter - forcing us to travel farther afield than normal to find our food.  After receiving an update, one member of our community responded with this message.

Margie,

Since this is probably a very challenging time for you and your business partners - I would just like to take this opportunity on a cold, dreary night to tell you how much I am absolutely loving your company.  It has completely changed the way I look at, cook with and think of food.  I have lost about five pounds (in just a few months) just by taking the time to cook with these amazing vegetables.  Also, I have always loved to cook but the new ingredients have definitely raised the bar on my cooking and the way I approach my meals each week.  Everyone that comes to my home and sees my beautiful basket asks if they can get the link to your website - I know two of my friends have already signed up.

So - I will still be thrilled to get my basket this week and for the next three weeks and will just be thankful for what is inside!

Eggplant, Okra, and Basil - Oh My!

A note from our friend Scarlett about the different ways she’s been using her vegetables….

By the way we have completely loved all the veggies.  We are eating so much healthier now.  Last night we grilled the eggplant and the okra with a marinated pork tenderloin. It was outstanding.  Then so I didn’t lose my basil (which I’ve kept in a water glass in the fridge) I made garlic (from VH) basil butter and put it in the freezer.  I’ll be loving it on grilled steaks and fish over the colder months.

Our favorite though has been those delicious little tomatoes.  They are like candy.  I still have a couple left that I’m hording. Haha

Thank you soo much for your delivery service.  We are completely loving it.
