Apple Cobbler
If you are looking for a simple classic cobbler recipe, this is it. This is a very easy way to get a great dessert in the oven while you are having dinner. The Yates apples we have this week are bright in flavor and the apples bake down into sweet-tart flavors against a buttery, crumbly crust topping. Enjoy this with a dollop of pure vanilla ice cream or just warm with a cup of coffee.
Ingredients:
6-8 small apples, sliced
2 tablespoons lemon juice
1 cup flour (I am using organic wheat flour from our own Mills Farm in Athens)
1 cup sugar (i am replacing some of this with fresh local honey for sweetener)
1 large egg
1 teaspoon cinnamon
½ cup butter, melted
Preparation:
Preheat oven to 350°F.
Lightly grease an 8-inch baking dish.
Toss apples and lemon juice in a large bowl and arrange along bottom of prepared baking dish.
In a large bowl, mix flour, sugar, egg, and cinnamon until resembles coarse cornmeal.
Sprinkle over apples and pour the melted butter over the top of the entire dish.
Bake 30 minutes, until juices bubble and top is golden.
Serve warm or cold.
