Garlic Mashed Sweet Potatoes
Pungent garlic and herbs round out the mild sweetness. This recipe is for my friend Brian who loves the potato but has never become friends with the sweet potato. I hope this one helps. After all, anything with garlic has GOT to be good. These are sooo good!!
Ingredients:
2 sweet potatoes or one large (1 lb.) (you can mix sweet potato with a golden potato too)
2 sprigs fresh rosemary (rosemary grows on every block in Atlanta)
1 sprig fresh thyme
3 whole garlic cloves, peeled
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
1/4 cup sour cream
1/4 to 1/2 cup milk
Peel and cut each sweet potato into eight pieces. Place in a medium saucepan with herbs, garlic, salt, pepper and 3 cups of water. Add additional water, if needed, to cover sweet potatoes. Bring to a boil, reduce and simmer 15 to 18 minutes or until tender when pierced with a fork. Drain sweet potatoes. Discard rosemary and thyme OR finely chop and save as a garnish to top the potatoes. Transfer sweet potatoes and garlic to a medium bowl and lightly mash with fork. Add butter, sour cream and milk. Using a hand mixer on low speed, mix until well blended and slightly chunky. Adjust seasonings to taste.
