Pan Seared Okra w/ Sweet Potatoes

For this week I am sharing one of the simple little saute recipes.  I have definitely gotten over my fear of okra this season thanks to this new adventure I am taking along with all of you.  I think you will like this and you don’t have to add the sweet potatoes.  You can add almost anything you like, I have used a squash in this before.

Ingredients

1 cup okra, sliced thin
1 pepper chopped
1 T olive oil
1 sliced sweet potato, steamed or cooked in microwave (a med takes about 2 minutes, checking regularly) but still slightly firm
1 or 2 cloves of garlic

Instructions

Heat a skillet, cast iron preferably. Add the okra and pepper and let cook on high until it begins to brown. Add the oil and turn the okra and peppers, add the sweet potato slices and garlic and stir. Allow all to brown on the other side and serve.

Sometimes a splash of water in the pan will allow a little more cooking without additional oil.
