Sauteed Turnips & Sweet Potatoes

I know several of you have never really cooked or prepared turnips before.  Don’t be afraid of these wonderful veggies.  They are really very easy to use.  I thought I would share a very simple saute that I did this week with what I had on hand.  Please don’t hate me because I used my microwave in this one…

Ingredients:
1/2 lb of turnips with greens
2 small sweet peppers, chopped coarsely
1 sweet potato
1 small onion (optional)
1 T olive oil
water
salt and pepper to taste

Preparation:
Wash turnips and greens thoroughly.  Chop the turnip away from the greens.  Discard additional stem.  Cube the turnips and cut the greens in 2″ pieces.  Cube the sweet potato.  Rinse the potato cubes and put in a small bowl.  Add water to slightly cover.  Microwave on high for approx 3 minutes or until tender but not too soft.

While potatoes are in the microwave, heat skillet and add olive oil, onion, peppers, and turnips.  Cook for 1 minute and add potato cubes and greens.  Saute for five minutes and until browned in places.

Salt and pepper to taste and serve.  This is a beautifully colorful dish!
