Cold Lithuanian Borscht
I know we had a chilled soup recipe last week too but it is, after all, almost 100 degrees outside most of this week! This is such an easy recipe and comes out looking absolutely beautiful. If you don’t have dill around, fresh parsley or cilantro works really well too. I am planning to enjoy mine with a lettuce salad and some grilled green garlic.
Ingredients:
1 bunch beets
1 1/2 qt. water/ veg or chicken stock (or any combination)
1 cup cucumber, peeled, chopped
1/8 cup dill, minced
1/8 cup white vinegar
1 cup sour cream
*Keep a bit of dill sprigs and a few thin slices of cucumber (for garnish)
Preparation:
Boil the beets until just tender, and then shred.
Combine all ingredients and chill.
Garnish with dill and cucumber.
This is traditionally served with cold boiled potatoes on the side.
