Cucumber, Radish & Asian Greens Salad

This is a great recipe to couple with some roasted or grilled fish or chicken.  I sometimes roast a nice flaky fish (snapper or mahi mahi)  topped with lime and garlic to serve with this salad.  A perfect meal!

Ingredients:
1/2 cup walnut pieces
4 oz Asian greens sliced or torn
1 green cucumber, peeled, thinly sliced cross-ways
1 bunch radishes, washed, stems and roots trimmed, thinly sliced cross-ways
2 tbs peanut oil
1 tbs soy sauce
Salt & freshly ground black pepper

Preparation:
Place walnuts in a small frying pan over medium heat and cook, stirring, for 5 minutes or until toasted. Set aside to cool. Coarsely chop.

Combine Asian greens, cucumber and radishes in a bowl. Gently toss to combine.
Whisk together oil and soy sauce, and drizzle over salad.

Season with salt and pepper and sprinkle with walnuts.
