Cucumber Mint Salad

As we move into the really warm weather, I love adding mint to my diet.  Here is a very simple and really tasty way to do so.  It also uses your cucumbers from this week, too!  Let me know what you think.

Ingredients:

a few cucumbers (2 or 3, depending on size)
1/2 small onion sliced thin and cut into 1 ” pieces
10 mint leaves, thinly sliced
white vinegar
olive oil
1/4 lb of feta cheese (my vegan friends can add a soy cheese for this if you like)
salt and freshly ground pepper to taste

Directions:

In a medium size bowl, toss together the sliced cucumbers, onion, mint leaves and sprinkle in a little olive oil and vinegar.
Add the salt and pepper and toss to coat.  Right before serving add the crumbled bits of feta cheese.  Serve immediately.

Also, sometimes I add a spoonful of plain yogurt if I want a creamier texture.
