Spring Greens Salad
Ingredients:
1 to 2 heads of lettuce (depending on size)
1/4 cup minced spring onions
1/4 to 1/2 cup minced dill
1/2 cup crumbled feta (optional)
for dressing:
1/2 cup olive oil
1/4 cp wine vinegar (if you use balsamic, don’t use this much)
1/2 to 1 tsp salt
1/2 tsp pepper
2 Tbl. fresh lemon juice
Preparation:
Wash & dry lettuce and tear into very small bite-size pieces (I sometimes cut shreds with a knife.)
Combine with onions and dill in a large bowl.
Just before serving, mix all ingredients for the dressing and pour over salad reserving a small amount. Top with cheese, if you are using it, and drizzle the last of the dressing over the cheese.
Optional - Olives are a natural addition to this salad if you like.
