Crowder Peas

Ingredients:
1 cup of shelled peas or more
2 cups of lightly salted water
1 T olive oil
1 T vinegar (cider or red wine)
Salt and pepper

Preparation:
Bring the water to a boil.  While the water is coming to a boil make sure to clean the peas after shelling.

Add the peas to the boiling salted water.  Lower the temperature to simmer for 20 minutes or until peas are tender.  Meanwhile whisk the oil and vinegar together.  Add a little garlic and salt and pepper as desired and sit aside.

Drain peas.  Drizzle the oil and vinegar over the peas.

These can be eaten warm or cool.
