Okra & Potatoes

After speaking to many of you, I have realized that you either love okra or you are scared to death of it!  Well, I was in the “scared” category for years.  It was always the texture that got me but I have finally tasted yummy okra and I am starting to get it.  For those of you that have no idea what to do with this odd little veggie, I beg you to try this recipe.  You will be able to use your okra, potatoes and a hot pepper from this week’s basket. This is an easy dish to put together too. Let me know what you think!

This recipe is a simple Indian dish.  If you don’t want it spicy, leave out the hot pepper.

Ingredients:

1 lb (your bag ) of fresh Okra
One large onion
1 (one) potato, peeled if you like
3-4 tablespoons cooking oil ( I mix butter and olive oil)
1 hot green pepper (remove stem, slit lengthwise)
1/2 (half) teaspoon salt
1/2 (half) teaspoon turmeric powder

Wash okra, remove stems, cut lengthwise (about 4 pieces for each pod), then dry on paper towels.

Cut onion in long thin slices. Cut potatoes into cubes, about 1/2″ in size.

In large pan, heat oil on medium heat. Cook onions and potatoes and stir until lightly browned. Add salt, turmeric and then the Okra pieces, plus the hot pepper. Cook uncovered. Stir occasionally until done, approximately 15-20 minutes.
