Quinoa-stuffed 8-Ball Squash
Since quinoa is a complete protein it makes for a great meal for vegetarians. I eat meat but I love meals with quinoa!
Ingredients:
1/2 c quinoa – rinsed and then cooked in 1 c water
1/4 c finely diced sweet peppers
1 finelly diced shallot or green onion
1 garlic clove, diced
1/4 c chopped basil
1 tsp oregano
5 olives diced
1/4 c tomato sauce
1/2 tbsp olive oil
Preparation:
To prep the squash, cut the stem off leaving a small flat surface on top and then cut the bottom the same way, the cut the squash in half so that it can sit on the flattened area from removal of stem and base and have the open side facing up. hollow out the halves using a spoon and steam it for a few minutes (I placed mine upside down in about 1″ of water in a covered pan).
Heat the oil in a pan and add the garlic, shallots and peppers – sweat until softened
Add the olives and a small amount of the scooped squash (a few spoons) and mix to combine**
Add the cooked quinoa and tomato sauce or crushed tomatos – stir
Once heated through add basil and oregano
After squash has softened, fill with the quinoa mixture and top with some shredded parmesan or crumbled feta. Place in the broiler for 2-5 minutes. Remove when the cheese on top looks ready and enjoy! These large squash can be sliced to serve.
**the remaining squash that was removed can be used for another dish.
