Tomato Cucumber Salad

This is a simple summer recipe for salad to accompany any protein entrée.  The other night I made a batch of falafels and a bowl of this salad with basil and mint instead of parsley.  Allow yourself to make it your own.  Remember as we eat local, we have to reverse the hierarchy.  The ingredients tell us what we are making, we don’t decide the ingredients.  Enjoy!

Ingredients:

2-3 medium ripe tomatoes diced
1 small green pepper diced
2 medium cucumbers pared and thinly sliced
1/2 cup minced parsley
1/4 cup minced fresh mint leaves
1 small onion (optional)
1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon salt

Place tomatoes, pepper, cucumber, parsley, mint and onion in a salad bowl.
Beat together lemon juice, olive oil and salt then pour over vegetables.
Toss and serve.

*If you eat cheese, a feta or mozzarella can be a great addition to this salad.
