Noodles w/ Broccoli in Spicy Peanut Sauce

This is a great weeknight dinner or an easy lunch.  Once you have boiled the water, you have done most of the work.

Ingredients:
4 Tbs peanut butter
4 Tbs hot water
1 1/2 to 2 Tbs soy sauce (or Bragg’s amino )
1 1/2 tsp Worcestershire sauce
1 tsp minced garlic
3/4 tsp sugar (or a bit of honey)
1/4 tsp cayenne
1/2 lb noodles, or fusilli
1/2 lb broccoli, cut into 3/4” pieces and the stems peeled and cut crosswise into 1/4” thick slices
2-3 carrots, chopped

Preparation:
whisk together in a large bowl the peanut butter, water, soy sauce, Worcestershire sauce, garlic, sugar, cayenne, and salt to taste until the sauce is smooth.
In a saucepan of boiling salted water, boil the pasta until it’s barely al dente, add the broccoli and carrots, and boil the mixture for 2-3 minutes, or until the vegetables are al dente.
Drain the mixture well, add it to the peanut sauce, and toss the mixture well.
Serves 2.
