Stuffed Pasta w/ Winter Greens & Goat Cheese
Here we are once more with our winter greens and ways to cook ‘em up!
Ingredients:
12 cooked lasagna noodles (I cook 13 so I have room for error)
1 cup of ricotta cheese
1 cup goat cheese
1 quart of prepared marinara sauce
2-3 cups of chopped winter greens (collards, swiss chard, kale or brussel sprout)
1 T olive oil
2 eggs
salt and pepper
Preparation:
preheat oven to 400 degrees
arrange the cooked lasagna noodles on a tray to drain
oil a baking dish and spoon in a small amount of the marinara;
heat 4 cups of water in a pot to boiling and add greens; only cook for a few minutes til slightly limp and drain. Set aside
In a medium mixing bowl stir the cheeses together and mix in eggs. when greens are drained well, add them to the cheese mix. salt and pepper to taste (I like a good bit of pepper for the filling and sometimes add red pepper flakes for a pop)
take one noodle at a time and spoon a layer of filling across the noodle, slowly roll the noodle loosely and set in prepared baking dish, the end of the noodle side down; spoon sauce over each roll as you position and repeat until all noodles are stuffed.
bake for 30 minutes & Enjoy! These are also great frozen for another day’s meal.
