Wow, has it been a blustery week of spring weather or what?
The weather out there screams spring, and our farmers are already getting ready for summer – can you believe it? Margie left Serenbe this morning and told me that they’d already turned the ground and started planting their delicious summer fruits, veggies, and herbs. One of the awesome things about Vegetable Husband is that Margie’s philosophy is all about getting good, healthy food to the people. Many of the volunteers work in trade for a basket of their own, and many of us couldn’t otherwise afford such fresh, local, organic food. Wowie, was it a busy day at VegHub HQ today! I got to relive my veggie sorting days and help Brian and Tracy load up the baskets, and at 2:30, Steve Miller rolled in with sweet potatoes and spinach just as the first drivers arrived. Everyone pitched in, and those spring baskets busting with green are on their way to you.

This week’s basket is green, green, green! I can’t wait to put that beautiful parsley into my morning green smoothies, and that bok choy and bunch of Brussels sprout greens are just begging to go into a tasty stir fry, aren’t they? On top of all those lovely greens, we’ve got summer squash this week and a pint of grape tomatoes from our friends in Florida. Does the fennel this week have you stumped? We have a recipe for that!
We’re seeing lots of lovely cool weather veggies this week! Broccoli, sweet potatoes, and greens, and we’re lucky enough to get grapefruit from our friends in Florida once again. Because of the downright spooky weather lately, Margie had quite the time pulling this basket together – the lineup changed quite a bit as she worked with our farmers to get us our food.
